CHICKEN FAJITA PASTA

Ingredients
4 Chicken Breast, cut into small chunks
2 Red Peppers, cut into strips
2 Fajita Sachet seasoning
1 Red Onion, diced
500 Grams Mascarpone
500 Grams Pasta of your choice
Instructions
- 1Cook the pasta according to the package instructions. Once cooked, drain it and set aside.
- 2In a frying pan, heat a teaspoon of cooking oil and then add the chicken.
- 3Cook the chicken until golden and is cooked through.
- 4Add the peppers and onions to the pan, and cook until they become soft.
- 5Sprinkle the fajita seasoning over the contents of the pan, and pour in a cup of water.
- 6Increase the heat and allow the sauce to thicken slightly, which should take about 5 minutes.
- 7Once the sauce has thickened, reduce the heat to low and add the mascarpone cheese, stirring until it melts.
- 8Finally, add the cooked pasta to the pan and mix everything together until well combine and serve!
