Ingredients
1 ½ cups plain flour
1 tablespoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup pumpkin puree
1 cup milk
1 egg
2 tablespoons maple syrup
Instructions
- 1In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
- 2In another bowl, mix the pumpkin puree, milk, melted butter, egg, and maple syrup until smooth.
- 3Gradually stir the wet ingredients into the dry ingredients until just combined.
- 4Heat a non-stick pan over medium heat and lightly grease it with butter. Pour ¼ cup of batter for each pancake and cook until bubbles appear on the surface. Flip and cook the other side for 1-2 minutes.
- 5Serve with warm maple syrup, whipped cream, or a sprinkle of icing sugar.
